This recipe delivers fall-off-the-bone tender ribs with that perfect smoky, caramelized crust from the grill. The low-and-slow oven phase does all the heavy lifting in the heat of a Florida summer, while the quick grill finish adds char and outdoor flavor without hours over hot coals. Chef Randy’s Summer Oven-Slow Cooked Ribs

Ingredients
For the ribs & dry rub:
- 2 racks baby back ribs about 3–4 lbs total
- ¼ cup brown sugar
- 2 tbsp smoked paprika
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 2 tsp kosher salt
- 1 tsp black pepper
- 1 tsp chili powder
- ½ tsp cayenne optional, for a summer kick
- 1 tsp dried thyme or oregano brightens it up for summer
For the braising liquid & finishing:
- ½ cup apple cider vinegar or orange juice adds bright summer acidity
- ¼ cup honey or maple syrup
- 2 tbsp Dijon mustard
- 1 cup of your favorite BBQ sauce or make a quick summer version: mix store-bought with zest and juice of 1 lime, fresh chopped cilantro, and a pinch of cumin
Instructions
Prep the ribs
- Pat the ribs dry. Mix all dry rub ingredients together. Generously coat both sides of the ribs (use it all). For best flavor, wrap and refrigerate overnight or at least 2 hours.
Oven slow cook
- Preheat oven to 275°F (135°C).
- Place each rack on a large sheet of heavy-duty aluminum foil. Drizzle with the apple cider vinegar/orange juice and a little honey. Add fresh herbs if using. Seal the foil tightly into packets (double wrap if needed to prevent leaks).
- Place packets on a baking sheet and bake for 2.5–3 hours until the meat is very tender (it should pull away from the bones easily when tested with a fork).
Prep the grill
- While the ribs are in the oven, heat your grill to medium-high (about 375–425°F). Clean and oil the grates.
Grill finish
- Carefully remove ribs from the foil (save any juices). Brush generously with BBQ sauce on both sides.
- Grill 5–7 minutes per side until the sauce is sticky, caramelized, and you get nice grill marks. Watch closely to avoid burning the sugar. Brush with extra sauce in the last few minutes if desired.
- Rest the ribs for 5–10 minutes tented loosely with foil, then slice between the bones.
Notes
• Make-ahead: Fully oven-cook the ribs up to 2 days ahead, cool, and refrigerate in the foil. Finish on the grill when guests arrive — they’ll still be juicy.
• Summer twist: Add fresh pineapple juice to the braising liquid
