Roasted Tomato – Basil Vinaigrette
Ingredients
- 6 Roasted Tomato Halves (skins removed)
- 3 Tbsp. Oil (that the tomatoes have been roasted in)
- 1 Tbsp. Good Honey
- 2 Tbsp. Sherry Vinegar
- 15 Basil Leaves
- ½ tsp. Kosher Salt
- ½ Cup Extra Virgin Olive Oil
Instructions
- Place the first six ingredients into a Vitamix or blender and blend on high for 60 seconds - turn speed to low and then slowly drizzle in the olive oil to incorporate. Add salt to taste if necessary.
- Keep in refrigerator, allow to come to room temp before serving.
