Spaghetti Squash Gratinee’

Step aside mash potatoes! This spaghetti squash gratinee is a delicious side dish made with squash, cream, and rich, gruyere cheese. Perfect for fall and winter!

Equipment

  • 1 medium sized casserole
  • 1 mixing bowl

Materials

  • 3 cups Spaghetti Squash (cooked and shredded at room temperature
  • 2 cups Heavy Cream
  • 5 Eggs
  • 1 cup Shredded Gruyere or similar Cheese
  • ¼ cup Chopped Parsley
  • 2 Tbsp Fresh Thyme
  • ½ tsp Nutmeg

Instructions

  • In a greased medium sized casserole type dish, lay out the spaghetti squash in an even layer. Sprinkle Cheese, Parsley and Thyme over the Squash.
  • In a mixing bowl mix together Eggs, Cream, Nutmeg, Salt and Pepper until well blended. Adjust seasoning, then pour over Squash and bake in a preheated 300 degree oven for about 30 minutes (until firm-quiche consistency).
