Equipment

  • large Saute pan

Materials

  • 24 Mini pre-made tart shells or phyllo cups
  • 8 oz grated gruyere cheese
  • 8 oz cream cheese
  • 1 tablespoon olive oil
  • 1 lb bacon finely chopped
  • 2 large onions thinly sliced
  • 1/4 balsamic vinegar
  • 1/4 sugar
  • Salt and pepper to taste

Instructions

  • Blend gruyere and cream cheese in a food processor until smooth. Set aside.
  • Place a large Saute pan over medium heat and add olive oil. Saute bacon and onions together until softened. Reduce heat to low and continue cooking until Carmelized, about 20-30 minutes. Add the balsamic and sugar and cook until thickened and jam consistency. Season with salt and pepper.
  • Pipe cheese mixture into tart shells and top with jam.
